Replace '-' in title by '|'

Hello, :-)

I would like to make a tiny change in the title of my blog:

“Hackisition – Essays by Julien Le Coupanec ” by “Hackisition | Essays by Julien Le Coupanec “.

https://www.hackisition.com/en/

How can I do it? Nothing happens when I change $sep in pixelwars_theme_wp_title() inside the functions.php file.

Hi, you can find it in the header.php file of the theme.
