On a mobile phone the background image does not automatically resize to fit the screen. What is the size needed for it to always fit on all monitor and mobile phone screens?

All devices dimensions are different so it is not possible to protect the size. WordPress is cropping the background images a little bit.
You can remove the text from the image and use the rotate word instead of default text on the image.

Text is working fine now. only problem i am having is making it central in the page…. I cant find any info and I have tried so many things. Any help would be great.

Could you update your theme please?
It looks like you changed the main theme files. Please deactivate all your plugin and update your theme? It will looks okay then.
