Up until recently this theme has been working fine, now on the homepage (Full page width template) the images default to a 2 column grid where it had always been three columns, no matter how many I specify it always displays 2
Also the blog page with blog posts as gallery no longer work how they should now it shows the full images whereas it used to just should a grid of thumbnails

I would also like to know if there’s any way of doing rollover states on gallery images, this has never been a feature but do you know if there is a way as I want to show a before and after

First of all deactivated all you plugin. Could you create your home page again ? Shortcodes looks messed up. For your pictures, please go to add media > create gallery and choose your column under gallery settings as well.
And then please check these steps as well.
Appearance > Theme options > style > Gallery Type For Posts And Pages

The posts seem to be now working as desired, but home page still not working
I have created a new version which can be seen as submenu of the main home page
