Hi, how can I change the text … “get to know about me and more” under “about me” and also the text of the button below? Thank you

Hi, Please go to dashboard > pages > edit about me page > go to excerpt area ( at the bottom ) > change it.
If you need to change the button text then you need to install and run loco plugin.
You can get information on localization section in the documentation.
