There looks likes two different versions of the site. One with demo homepage that can’t be edited but has the header edits I was trying to do with Customizer. And that I can edit with Elementor. The new pages look like Elementor edits, but I want to be able to edit the homepage and have new pages created with design elements from Customizer.

Please go to dashboard>settings>reading. Homepage and blog pages are selected here. If your homepage is selected here, elementor does not allow it to be edited. First, select the home page as another page. This will allow you to edit your homepage.
